Stuffed Shells

Meet the pasta recipe that had almost 300k views! This easy recipe is a childhood favorite of mine and truly perfect for the whole family! If you have a smaller baking dish, make a single serving and cut the recipe. Or make the whole thing and freeze in containers. PS: it’s also FILLED with greens (basil & spinach)

Ingredients:

  • 1 box jumbo pasta shells 

  • 1 tbsp olive oil

  • 2 tsp fresh garlic, minced

  • 5 cups fresh chopped spinach

  • 1/2 cup + 1/4 part skim ricotta cheese

  • 1/2 cup part skim mozzarella cheese

  • 1/4 cup grated Parmesan cheese, plus more for serving

  • 1 large egg

  • 2 tbsp fresh basil, finely chopped

  • salt pepper & red pepper flakes to taste

  • 1 large jar marinara sauce

Directions:

  • Preheat the oven to 375 degrees F. 

  • Cook the pasta al dente and let cool

  • Add chopped garlic to pan and cook in olive oil then sauté spinach 

  • Let cool

  • In a mixing bowl, stir together the spinach, ricotta, mozzarella, parmesan, egg, basil and salt and pepper (don't over mix)

  • Line a shallow dish with sauce (about 1/3 cup)

  • Stuff each pasta shell with a generous amount of the spinach and ricotta mixture, and place in the baking dish.

  • Add the rest of the sauce and bake covered with aluminum foil for 25 minutes. 

  • Remove the foil and continue baking for 10-15 minutes and broil for 5!
